Vegan Pumpkin Spice "Latte"


The last few days it has felt like fall here! It's been awesome. I busted out the Uggs and scarves! I don't care if its not really fall I've been pretending it has been for weeks! I love fall and love pumpkin spice lattes from Starbucks and have been begging the hubs to get me one. The sad thing is I love them with whipped cream and then pay for it after (I get rashes). Plus they are super expensive when I can make them for much cheaper at home and you don't need any super fancy equipment.


Vegan Pumpkin Spice "Latte"
1/2 cup strongly brewed coffee or espresso
1 cup milk of choice (I used 3/4 cup almond milk mixed with 1/4 cup full fat coconut milk to make it creamy)
2 spoonfuls of canned pumpkin puree
1/2-1 tsp pumpkin spice depending on how "spicy" you want it
2-3 Tbs sugar
1 tsp vanilla extract
A few dollops of vegan coconut whipped cream (optional but ohh does it make it good!)

Directions: Place milk in a saucepan. Whisk in canned pumpkin, sugar, and pumpkin spice. Gently whisk ever minute or so until it begins to lightly boil. Take off heat and add to strong coffee. I only use about half of the creamer and put the other half in the fridge for the next day. Dollop on coconut whipped cream and sprinkle more pumpkin spice on top. Enjoy the wonderful taste of fall.

This recipe is really good, simple, and quick! I don't miss Starbucks at all when I drink this. The hubs even liked it and he doesn't like coffee or coconut :)

  1. That sounds amazing! :-) It's spring here in Australia but today it feels every bit like Autumn. :-) My favorite part of fall are dark, cozy days when I can read and be warm. :-)

  2. Yup, this definitely sounds like something I could enjoy in the morning...and in the afternoon :-) My favorite part of fall is the return of cooler weather, sweaters in the morning, and the smell of baking bread and roasting veggies.

  4. Oooo, this sounds so good! Can't wait until our weather actually feels Fall-like. Right now it's still totally feels like summer--hot and muggy. But soon! I know it's coming! And then I will sip this while wearing my favorite sweater and watching the sunrise on my back patio! :-)
